The Canberra Racing Club (CRC) is responsible for Thoroughbred Horse Racing and is the Principal Racing Authority in the ACT. As a member based organisation the Club conducts 25 race meetings per year including ACT’s premier races, The John McGrath Black Opal Stakes and the TAB Canberra Cup. The Club also provides a quality dining experience to all members and patrons when attending  feature and non-feature race days while also providing several high quality function venues that can provide dining experiences from small corporate lunches up to 1000 seat functions outside of race days.

Elliott Gray are currently seeking the services of a motivated and passionate Kitchen Manager/Head Chef. You will not only want to deliver great food but also be a leader that will guide and motivate your team to grow with the increasing demand of a successful business. 

As Kitchen Manager, you will be working closely with and being supported by the Front of House Manager who will assist you in service delivery to ensure customer satisfaction and retention.
In this role you will have full operation authority over all aspects of kitchen operations with direct accountability to the Chief Operating Officer.

These will include but not be limited to: 

  • Menu design, pricing and implementation 

Operational tasks such as;

  • Set and adhere budgets in consultation with the Chief Operating Officer

  • Food Stocktake 

  • Accurate inputting and maintenance of all kitchen documents 

  • Planning, preparation and operation of functions in consultations with the Events and Catering Manager

  • Receiving and storing of food stock, supplies and equipment including accurate accounting of par levels.

Staffing;

  • Building, recruiting and supervising your preferred team

  • Weekly and monthly rostering 

  • Setting staff KPI's to ensure operating efficiencies

  • Maintaining customer satisfaction by liaising with clients and management.
